What’s the biotech?
We are placing a non-sterilised SCOBY (or Kombucha mother) on a lab grade vacuum steriliser. This has a small 5 micron filter, to allow for all nkinds of juicy goodness, except living micro-organisms, to be extracted from the SCOBY. We used mineral water, and we are plannning to characterise the microbiome of th SCOBies used.
